Silvano Giraldin is a Director Consultant at ‘’Chez Roux’’ Albert Roux Consultancy.
Silvano Giraldin was born in Padua in 1948. After graduating at Catering College in Abano Terme, he started creating a prestigious career in top hotels in Venice, Nice, Brussels and all over France as a Commis de Rang or Chef de Rang and even as a Sommelier. In January 1971, he began to work with the Roux family at their famed Le Gavroche restaurant in London. He started as Chef de Rang in 1986 to become General Manager and Director of Le Gavroche, and he has performed this function successfully until 2008 when he went to a deserved retirement. In 1982 Le Gavroche received the 3 Michelin Stars, first Restaurant in Britain to be awarded this. In 2008, when Silvano was leaving Le Gavroche, the restaurant was on the San Pellegrino World's 50 Best Restaurants list, voted no. 22.
He has been awarded numerous awards; Best Maitre d'Hotel by Observer Magazine, Moët & Chandon London Restaurant Awards - Outstanding Front of House, London Restaurant Awards and Restaurant Manager of the Year by Restaurant Magazine. Silvano wins Outstanding Contribution to the Aperitif a la Francaise sponsored by Sopexa at June 2004 and included in Hall of Fame - Restaurant Manager of the Year awarded by The Academy of Food & Wine UK. He was one of the founding members of Les Arts de la Table and Chairman since 1985, a member of The Academy of Food and Wine and President of Restaurant Manager Association. He was the first ever "Meilleur Ouvrier de Grande Bretagne" for service competition, Judge and Committee Member of the Ruinart Competition for Sommelier and Judge for the "Young Waiter / Chef of the Year" competition by Restaurateur Association/American Express.
