Jesús Monedero, born in Madrid, is the fifth generation of bakers.
He studied cooking in Aranjuez's School. Jesús learned the trade of being a chef in different restaurants of recognized prestige such as The Ritz Hotel (Madrid), El Bohío 1* Michelin (Toledo), Matteo 1* Michelin (San Sebastian), El Racó de Can Fabes 3*** Michelin (Barcelona). After he opened the restaurant Palio in Ocaña with his brother Isaac in 2009, the Michelin acknowledged their good quality with the Bib Gourmand. Because Jesús is a great baker and makes artisan bread everyday for the restaurant, they created an event for bread craftsman on ARTE-SA. From the year 2013 they are also members of JRE.
Jesús has published a book in 2016 about the quality bread in the gourmet restaurant ‘’El pan en palio’’. Restaurant Palio has has received the 2016 Metropolis Award for the Best Restaurant located outside of Madrid.
